If you like funky, fermented, "anaerobic" coffees, Baima is for you. Natural processed coffees from Baima are an excellent way to experience another small lot producer in the growing specialty coffee scene in Yunnan China. Baima is managed by Mr Shu Dong and under his leadership utilizes a high ferment method to bring out unique flavors. Notes of juniper berry overlap with citrus and dark chocolate. After being dried on raised beds the whole cherries are placed in oxygen free bags for extra fermentation. The elevation is 1400-1600 meters above sea level. The nearby dome shaped incline is called Baima Mountain, from which this coffee gets its name. Baima translates to white horse due to local stories about white horses being on the mountain. The Han and Hani people from the surrounding Pu’er region.
